Quinoa Pilaf

This Recipe is: Vegetarian, Vegan, Gluten-free, Dairy-free

Prep Time: 5-10 minutes

Cooking Time: 20-25 minutes

Serves: 4

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, peeled and diced
  • 5-6 mushrooms of your choice, sliced thin
  • 1-2 celery stalks, diced
  • 1 tablespoon fresh sage, minced
  • 1/2 teaspoon sea salt (or to taste)
  • 1 cup quinoa, rinsed
  • ¼ cup dried cranberries
  • 2 cups water

Directions:

  1. Saute onions for 1-2 minutes. Add mushrooms and continue cooking for 2-3 minutes.
  2. Add celery and sage and cook for 2 minutes. Add quinoa, dried cranberries and water.
  3. Bring to a boil. Reduce flame to simmer and cook for 12-15 minutes.
  4. Garnish with dried cranberries and sage.
