This Recipe is: Vegetarian, Vegan, Gluten-free, Dairy-free
Prep Time: 5-10 minutes
Cooking Time: 20-25 minutes
Serves: 4
Ingredients:
- 1 tablespoon olive oil
- 1 onion, peeled and diced
- 5-6 mushrooms of your choice, sliced thin
- 1-2 celery stalks, diced
- 1 tablespoon fresh sage, minced
- 1/2 teaspoon sea salt (or to taste)
- 1 cup quinoa, rinsed
- ¼ cup dried cranberries
- 2 cups water
Directions:
- Saute onions for 1-2 minutes. Add mushrooms and continue cooking for 2-3 minutes.
- Add celery and sage and cook for 2 minutes. Add quinoa, dried cranberries and water.
- Bring to a boil. Reduce flame to simmer and cook for 12-15 minutes.
- Garnish with dried cranberries and sage.
