This Recipe is: Vegetarian, Dairy-free
Prep Time: 5-10 minutes (excluding cooking rice)
Cooking Time: 10 minutes
Serves: 4
Ingredients:
- 1 tablespoon peanut oil (or other oil)
- 1 onion, peeled and diced
- 2 garlic cloves, peeled and minced
- 1-2 eggs beaten
- 1 stalk broccoli, florets
- ¼ cup green peas
- 2 cups cooked long grain brown rice
- 1-2 teaspoons toasted sesame oil
- 3 tablespoons soy sauce
- 1/3 cup water
- 2 spring onions, minced
Directions:
- Heat 1 tablespoon peanut oil and saute onion and garlic for 1-2 minutes
- Add eggs and mix until cooked.
- Add broccoli and green peas for 3-4 minutes.
- Add sea salt and add cooked rice to the pan.
- Season with toasted sesame oil, soy sauce and water
- Cover and steam for 2-3 minutes.
- Garnish with scallions.
