Chinese Vegetable Fried Rice

This Recipe is: Vegetarian, Dairy-free

Prep Time: 5-10 minutes (excluding cooking rice)

Cooking Time: 10 minutes

Serves: 4

Ingredients:

  • 1 tablespoon peanut oil (or other oil)
  • 1 onion, peeled and diced
  • 2 garlic cloves, peeled and minced
  • 1-2 eggs beaten
  • 1 stalk broccoli, florets
  • ¼ cup green peas
  • 2 cups cooked long grain brown rice
  • 1-2 teaspoons toasted sesame oil
  • 3 tablespoons soy sauce
  • 1/3  cup water
  • 2 spring onions, minced

Directions:

  1. Heat 1 tablespoon peanut oil and saute onion and garlic for 1-2 minutes
  2. Add eggs and mix until cooked.
  3. Add broccoli and green peas for 3-4 minutes.
  4. Add sea salt and add cooked rice to the pan.
  5. Season with toasted sesame oil, soy sauce and water
  6. Cover and steam for 2-3 minutes.
  7. Garnish with scallions.
